Why Vietnam Grows So Much Coffee (And Almost None of It Is Specialty)

In 1986 Vietnam produced somewhere around 20,000 tonnes of coffee. By 2000 it was producing close to 900,000. Today it is near 1.8 million. No other coffee origin has ever scaled like that, and understanding how it happened explains almost everything about the coffee that comes out of the country now — including why so little of it reaches you with an origin story attached.

Đổi Mới and the land

The turning point was the 1986 Đổi Mới reforms, which moved Vietnam from central planning toward a market economy and, critically, gave farming households long-term rights to work their own land.

At the same time the government was resettling populations into the Central Highlands — Đắk Lắk, Gia Lai, Lâm Đồng, Kon Tum — where the red basalt soil is deep, free-draining and fertile. Coffee was the obvious crop: a household could plant a hectare of Robusta and, within three or four years, have an income in hard currency.

The state supported it heavily. Irrigation, planting material, and later credit. The World Bank and other lenders financed expansion. Prices in the early 1990s were good. Everything pointed the same direction, and hundreds of thousands of smallholders planted at once.

Why Robusta and not Arabica

Two reasons, and both are structural rather than cultural.

Altitude. Arabica wants 1,000 metres and up, cool nights, and a large day-night temperature swing. Most of the Central Highlands sits between 500 and 900 metres. Only Lâm Đồng — Cầu Đất, above Đà Lạt — really clears the bar, which is exactly where Vietnam's Arabica is concentrated today.

Disease and yield. Coffea canephora is called Robusta for a reason. It shrugs off coffee leaf rust, which flattens Arabica in warm humid conditions, and it produces two to three times the volume per hectare. For a household betting its land on a tree that will not pay for three years, that is not a close call.

The volume trap

Here is where it turns. The system that got built was extraordinarily good at producing tonnes and structurally indifferent to cups.

Vietnamese Robusta is sold on the London futures market as a fungible commodity. Grade is assessed on screen size, moisture and defect count — bean physics, not flavour. A farmer is paid the same for a lot of carefully hand-picked ripe cherry as for one stripped green-and-red off the branch in a single pass, as long as the beans sort the same and the defect count clears.

So the whole chain optimised accordingly:

  • Strip-picking instead of selective ripe picking, because picking passes cost labour and pay nothing extra.
  • Patio and roadside drying on concrete instead of raised beds, because it is cheap.
  • Blending at the collector — several farms' output pooled at the first buyer, which erases traceability at the very first step.
  • Dark roasting downstream, because dark roast hides the defects that unripe cherry and uneven drying produce.

That is the origin of Robusta's reputation for being harsh, rubbery and flat. It is a description of commodity processing, not of the species. Picked ripe and processed with intention, the same trees give you the thick, sweet, low-acid cup described in our Robusta guide.

What "almost none of it is specialty" actually means

Specialty is a quality threshold: 80+ on the SCA's 100-point scale, with traceability back to a farm or a mill. The overwhelming majority of Vietnam's crop never gets cupped at all — it does not need to be, to be sold.

The specialty fraction is small in percentage terms and not small in absolute terms. A single-digit percentage of 1.8 million tonnes is still a great deal of coffee, and it is growing, because the incentives have finally started to change: direct-trade buyers who pay for ripe picking, producers investing in raised beds and sealed fermentation tanks, and a domestic café culture that has become genuinely discerning.

Why this matters when you buy

It means "Vietnamese coffee" tells you almost nothing on its own. The gap between the bottom and the top of this origin is wider than almost anywhere else on earth, because the bottom is enormous and industrial and the top is tiny and deliberate.

The questions that actually separate them: Was it picked ripe? Was it dried on raised beds or on the ground? Do you know which farm, or at least which commune? Is there a cupping score? Is there a harvest date?

An origin that can answer those is selling you a different product from the one on the futures screen, even when the species on the bag is the same.
