The standard brewing advice — 93–96°C, medium grind, 1:16, four minutes — was developed for washed Arabica. Apply it to a 72-hour anaerobic co-ferment and you will frequently get something sharp, boozy and unbalanced, and conclude that the coffee is badly made.
Usually the coffee is fine. The parameters are wrong for it.
Why fermented coffees behave differently
Three things change during anaerobic fermentation that matter at the brewer.
Extraction happens faster. Fermentation has already broken down cell structures and converted complex carbohydrates into simpler sugars and acids. Some of the work your hot water usually has to do has been done in the tank. Same parameters, more extraction.
The soluble profile is different. More ethanol-derived esters, more higher alcohols, more lactic acid. Many of these are the good part — they are what makes the coffee taste of pineapple or peach. They are also the compounds that turn unpleasant first when you push too hard.
The failure mode is louder. An over-extracted washed coffee tastes flat and drying. An over-extracted heavy ferment tastes of nail polish. The margin for error is the same; the penalty is worse.
The adjustments
Cooler water. 88–92°C rather than 93–96. This is the single highest-leverage change. If your kettle has no temperature control, boil and then wait ninety seconds.
Coarser grind. One or two steps coarser than your usual setting for the same method. Less surface area, less extraction.
Shorter contact. Cut immersion times by 30 to 60 seconds. A French press that would normally steep four minutes goes to three.
Slightly lower ratio. 1:16 to 1:17 rather than 1:15. These coffees carry more soluble material, so a weaker ratio still gives a full cup.
Change one variable at a time, or you will not know which one helped.
Method by method
Cold brew — the best answer for co-ferments
Ratio: 1:4 concentrate, or 1:8 ready-to-drink. Grind: coarse. Steep: 18–24 hours, refrigerated, then filter.
Cold water extracts a genuinely different compound set. Many bitter compounds and most of the harsher acids are far less soluble cold, while the sweet esters come through. On a pineapple or peach co-ferment the result is startling — closer to fruit juice than coffee, sweet enough to need nothing added.
Refrigerate rather than steeping at room temperature. Warm steeping continues fermentation you did not ask for.
Pour-over — the best hot method for clarity
Ratio: 1:16. Grind: medium, a step coarser than usual. Water: 88–90°C. Bloom: 45 seconds — longer than usual, because these coffees often degas vigorously.
Pour slowly and in stages. The paper filter strips oils and gives you the cleanest read on what the fermentation actually produced, which makes pour-over the right choice when you want to evaluate a coffee rather than simply enjoy it.
Phin
Grind: medium, slightly coarser than for a traditional Robusta. Water: 90–93°C.
Works well, particularly with fruit-forward lots. The concentration suits them. Watch the drip time — a fermented coffee that runs long goes bitter faster than a washed one.
French press
Ratio: 1:14. Grind: medium-coarse. Steep: 3 minutes, not 4. Plunge slowly.
Immersion keeps the oils and flatters body, which suits heavy fermented Robusta. Pull the shorter steep seriously; four minutes is genuinely too long here.
Espresso
Ratio: 1:2.5 to 1:3, not 1:2. Temperature: 90–91°C. Dose: normal.
The longer ratio is the key adjustment. At 1:2 a heavy co-ferment is overwhelming — all fruit intensity and no structure. Pulling longer dilutes it into proportion. More on Robusta espresso.
Diagnosing the cup

The vinegar row matters: it is the one problem that is not yours. Acetic sharpness means the fermentation ran too far or went aerobic, and no parameter change will rescue it.
Let it cool
Fermented coffees change more across the temperature range than washed coffees do, because ester perception is strongly temperature-dependent.
Pour a cup and taste it at three points: straight away, at about four minutes, and at ten. The fruit typically arrives in the middle window, and a coffee that seemed one-dimensional hot will often open dramatically as it cools. It is the cheapest experiment in coffee and most people never run it.
Start black
Always. Milk and sugar bury exactly the compounds the producer spent three days in a sealed tank creating. Taste it black first, decide what it is, and then do whatever you like.
